Pasupati

Directions: 


Step 1: Heat olive oil in a pan over medium-high heat. Sautee the garlic, onion, and parsley until tender for about 5 minutes. 


Step 2: Stir in the Pasupati Basmati Rice, pine nuts and hot water. Cover and simmer until rice is half cooked, about 10 minutes.


Step 3: Remove from heat. Stir in tomato paste, ground cumin, and salt & pepper. Let the mixture cool for some time.


Step 4: Rinse grape leaves in warm water; drain and cut off any stems. Place about 1 spoon of the cooled rice mixture in the center of a leaf. Fold in the sides and then roll into a cigar shape. 


Step 5: Place it in a large pot by placing an inverted plate on the bottom. 

Repeat with remaining ingredients.


Step 6: Pour in just enough warm water to reach the bottom of the first layer of dolmas. Cover and simmer over low heat for 30 to 45 minutes, or until rice is totally cooked. Check the water level often and add more as necessary.


Step 7: Transfer the dolmas to a serving dish. Drizzle with olive oil and lemon juice and serve at room temperature or cold.

2 tablespoons olive oil

1 clove garlic, minced 

1 yellow onion, minced 

1 cup Pasupati Premium Basmati rice

1/4 cup pine nuts

2 tablespoons tomato paste

1 tablespoon parsley

10 grape leaves, drained & rinsed

1 teaspoon ground cumin

Salt & pepper, to taste

1/4 cup lemon juice
