Step 1:
Wash the chicken, and keep it aside. Then wash the rice and soak it for half an hour.
Step 2:
Heat a large stock pot. Add olive oil, chopped onions, spices and ginger garlic paste. Sautee them for a while.
Step 3:
Stir in tomato puree & grated carrots. Simmer over a low heat for a couple of minutes.
Step 4:
Add turmeric powder, salt, pepper and cook for 10 minutes.
Step 5:
Add the fried onions and chicken.
Step 6:
After the chicken is half cooked, add water and bring it to full boil and then add the soaked rice in it. Keep it on high flame for 10 minutes and then lower the flame. Cook the rice on low heat till it gets soft.
Step 7:
Add raisins before the last 10 minutes of cooking.
Step 8:
Once the rice is tender, place it on the serving dish and garnish it with almonds.
The Kabsa Rice is now ready to serve hot!
Quick tip: Serve the Kabsa Rice with curd or raita and a salad for a better taste.
